The key to a good breakfast toast we believe is piling the toppings on high. This spin-off has hard boiled eggs, bean sprouts and tomatoes. Get creative and give it your own flair with different toppings!

When you need a quick and satisfying breakfast, this is the perfect solution to fuel you in the morning. You’ll be ready to take on the day with this toast!

You can even meal prep the recipe by having the hard boiled eggs already made and ready to go so that all you have to do is make the guacamole, toast the bread and pile on the toppings in the morning before you’re out the door!

Breakfast Guacamole Toast Recipe

Savory and flavorful guacamole toast is a nutritious breakfast option full of delish flavor!

Ingredients:

  • 4 slices of toast
  • 2 large avocados
  • 2 tablespoons lime juice
  • 1 minced garlic clove
  • 2 tablespoons chopped cilantro
  • ½ teaspoon salt
  • ¼ cup sliced grape tomatoes
  • ¼ cup bean sprouts
  • 2 quartered hard boiled eggs

Equipment:

  • Cutting board
  • Knife
  • Toaster
  • Potato masher or fork
  • Mixing bowl
  • Measuring cups
  • Measuring spoons
  • Medium-sized pot
  • Stove

Recipe Steps:

Hard boil the eggs:

  1. Bring a medium pot of water to a boil. Add the eggs and boil for 10-12 minutes.
  2. Once the eggs are done boiling, drain the water in the pot.
  3. Run the cooked eggs under cold water and remove the shell.
  4. Set the eggs aside for later use.

Make the guacamole:

  1. In a mixing bowl add the avocado, lime juice, garlic, cilantro and salt. Mix well with a potato masher or fork and taste for any additional seasoning.

Prepare the toast:

  1. Toast 4 slices of bread and spread the guacamole on each slice.
  2. Top each toast with sliced grape tomatoes, sliced hard boiled eggs and bean sprouts.
  3. Squeeze a slice of lime on top before serving for extra zesty flavor!

Serving Suggestions:

Serve up this toast for breakfast or even as a snack. It makes a great afternoon pick me up to keep you full until dinner time. 

Right before serving, squeeze fresh lime juice on top or give the toast a drizzle of olive oil for richness.
