INGREDIENTS

  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1 tablespoon packed light brown sugar
  • 1/4 teaspoon red chile flakes
  • 2 teaspoons canola oil
  • 1/4 teaspoon salt
  • 1/2 pound (30 to 35 per lb.) peeled, cooked medium shrimp
  • 1/4 firm-ripe Hawaiian papaya, peeled and cut into 1/4-in. dice
  • 1/2 ripe cherimoya*, peeled, seeds left in, and cut into 1-in. chunks
  • 1 teaspoon chopped cilantro leaves
