Chicken with 40 Cloves of Garlic

INGREDIENTS:

  • 8 Chicken thighs
  • 1/2 cup olive oil
  • 2 ribs celery, cut into 1/2 inch slices diagonally
  • 1 medium onion, in 1/2 inch dice
  • 1 tablespoon fresh tarragon (or 1 teaspoon dried)
  • 1/2 cup dry vermouth or other dry white wine
  • salt and freshly ground black pepper to taste
  • 40 cloves garlic, unpeeled

INSTRUCTIONS:

  • Preheat the oven to 450
  • Put chicken thighs into a bowl, pour on the olive oil, toss until coated on all sides
  • Place the onion and celery in the bottom of a Dutch oven, sprinkle with tarragon.  Place the chicken on top.
  • Pour on the white wine and add salt and pepper.  Add garlic cloves, tucking them in every nook and cranny you can find.
  • To make sure that no steam escapes, cover the pot first with heavy aluminum foil, then with the lid.  Bake for 1.5 hours (no peeking!). 
  • Once cooked, remove the lid and cut a hole in the foil to allow the steam to escape.  Then remove foil.
  • Serve with sliced toasted crusty bread.  Squeeze the garlic out of the skin onto the bread and spread like butter.
