This dragon fruit chia pudding with rambutan is a perfect way to start your day enjoying some amazing, exotic fruits and ingredients. It needs to be prepared the night before you plan to eat it and you'll have trouble staying in bed in the morning in anticipation of such an incredible breakfast. It also makes a fantastic dessert!

INGREDIENTS

  • 2 ripe dragon fruit
  • ¼ cup chia seeds
  • ½ cup coconut milk
  • ½ teaspoon cinnamon
  • ¼ tsp cardamom
  • 1 tsp vanilla extract
  • 3 tbsp maple syrup
  • ¼ tsp turmeric
  • Pinch of salt
  • 4-5 rambutan
