Dragon Fruit Salad

Need an easy, quick salad full of flavor? Then, try our dragon fruit salad - made with fresh berries and dragon fruit on a bed of greens dressed in a honey mint vinaigrette.

Ever had dragon fruit before? If not, it has a slightly sweet flavor similar to a pear and a seedy texture similar to a kiwi. Since the flavor of dragon fruit is mild, adding a flavorful vinaigrette is key!

We use honey, mint, olive oil and a pinch of salt to create a sweet and zesty dressing for this salad. It adds a punch of flavor and helps enhance the natural sweetness of the fruit.

The fruit is coated in the vinaigrette and then served on a bed of greens. You can also get creative and serve the salad in the dragon fruit peel. Since the flesh of dragon fruit easily separates from the peel, you can scoop the fruit back into the peel for serving.

This recipe is easy to make and a fun way to change up typical fruit salads. If you need a vegan alternative to honey, substitute maple syrup.

Ingredients:

  • 1 dragon fruit chopped
  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 4 cups greens
  • 1 tablespoon chopped mint leaves
  • 1 ½ teaspoons honey
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoon olive oil
  • pinch of salt

Equipment:

  • Cutting board
  • Knife
  • Salad serving bowl
  • Bowl for vinaigrette
  • Whisk
  • Medium-sized bowl for dressing the fruit

Recipe Steps:

Prepare the fruit:

  1. Starting with the dragon fruit, slice and discard the ends. Cut the dragon fruit in half lengthwise and using your hands, remove the peel from the flesh. Chop the dragon fruit into bite-sized pieces and place in the medium-sized bowl.
  2. Wash and slice the strawberries into bite-sized pieces and add to the bowl.
  3. Wash and measure the blueberries and add to the bowl.

Prepare the honey mint vinaigrette:

  1. Whisk together the honey, chopped mint leaves, olive oil and a pinch of salt in a small bowl.
  2. Pour over the fruit bowl and mix it together.

Prepare the salad bowl:

  1. Add the greens to the salad bowl and top with the dressed fruit. Garnish with extra mint leaves if desired.

Serving Suggestions:

Enjoy this salad as a snack, take to a party or use it as a side dish.

The refreshing mint and honey combo is perfect for summer meals, but get creative with the recipe and change it up for cooler weather meals too!
