Easy Goji Berry Bars

When you need a fruit-based snack that will stave off hunger and a sweet tooth, look no further than our goji berry bar recipe! These bars are made of just a few simple, raw ingredients and will satisfy many kinds of cravings.

Chewy, tart goji berries are a hard-to-find delicacy that are renowned for their health benefits. That’s cool and all, but we’re in it for the flavor. 

Goji berry flavor is a distinct combination of a tomatoey cranberry, with sour sweetness of a ripe cherry. In this easy snack bar recipe the unique tart flavor of goji berry pairs deliciously with coconut, cacao, and cashews, set in creamy dates with a hint of vanilla. 

Fruitstand’s goji berry bar recipe is pretty adaptable once you get the hang of it. Swap in different nuts, seeds, and even nut butters for different textures and flavors. You can easily double the recipe to make a big batch for a get-together or to keep in the freezer.

This is an easy recipe to make with kids, or to toss together for a shareable party snack. Add them to your lunch box or duffel bag for snacking emergencies. Plus, this is a great snack to share with friends who are gluten free, vegetarian or vegan, and can be easily adapted to suit those who refrain from eating nuts as well.

GOJI BERRY BAR RECIPE

Few ingredients, and even fewer steps! Prep a pan, then toss the ingredients into a food processor to incorporate. For those who enjoy more texture, pulse together all of the ingredients except the cacao and half of the coconut, and fold in the reserved ingredients before refrigerating. 

INGREDIENTS:

  • 1 cup dried Goji berries
  • 2 cups plump dried, pitted dates
  • 1 cup cashews (optional)
  • ½ cup unsweetened coconut flakes
  • ½ cup cacao nib
  • 1 teaspoon vanilla
  • Pinch of kosher salt

EQUIPMENT:

  • Food processor or high powered blender
  • Chef knife
  • Cutting board
  • Measuring cup
  • Rubber spatula
  • 9-inch square baking dish
  • Cooking spray
  • Wax or parchment paper

RECIPE:

  • Begin preparing the baking dish by applying cooking spray. Then, cut two pieces of wax or parchment paper, laying one down in the tray to cover the bottom and up two opposite sides of the pan, then the other, and set aside. 
  • Next, add all of the ingredients into the food processor or blender. Pulse to combine. Ingredients should just come together in a thick paste.
  • Using your rubber spatula, empty all of the combined ingredients from the food processor into the prepared tray. Smooth the paste down in one even layer, about ¾ inch thick. Fold the paper over the flattened goji berry bar mixture, and place in the refrigerator to firm up for about 2-4 hours.
  • Once the goji berry bars are set, remove them from the tray and onto a cutting board. Cut the bars into 3-inch squares and store in a sealed container in the refrigerator. 

Store the goji berry bars in the refrigerator for a week, or in the freezer for up to three months.
