Gooseberry Pie

For those of you who love a sour-sweet dessert, this gooseberry pie is just the thing. It's not overly sweet and is a perfect way to use up those gooseberries while they're at their best. 

And if you're one for making ice cream, try this homemade vanilla ice cream recipe for the perfect companion to this wonderful pie.

We added a touch of cinnamon and nutmeg to the gooseberry filling to add a hint of spice. If you’ve never made a pie with gooseberries before, you’re going to be running to the store to get some now! 

The rich golden color is all thanks to the bursts of gooseberries as they simmer with the sugar and spices. The berries will pop and ooze in the saucepan and thicken up into a sweet filling.

In just three simple steps, you’ll have your own gooseberry pie ready for savoring! All you have to do is prepare the gooseberry filling, assemble the pie crusts, bake the heavenly pie and enjoy!

Gooseberry Pie Recipe

Sweet and sour gooseberry pie is the perfect treat to satisfy your sweet tooth.

Ingredients:

  • 9-inch double pie crust
  • ⅓ cup water
  • 3 cups gooseberries
  • 1 cup sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 egg white

Equipment:

  • 9-inch pie pan
  • Oven
  • Large saucepan
  • Whisk
  • Brush
  • Cutting board
  • Knife
  • Measuring cups
  • Measuring spoons

Recipe Steps:

Prepare the gooseberry filling:

  1. In a large saucepan over medium heat, whisk together the water, lemon juice, sugar, cornstarch, cinnamon, nutmeg and salt.
  2. Once dissolved, add the gooseberries and bring them to a gentle boil for 2-3 minutes. Once the mixture thickens, take it off the heat to cool.
  3. Pour the gooseberry filling into a 9-inch pie pan covered in a pie crust. 

Finish assembling the pie:

  1. Place the top crust over the pie and pinch the edges together.
  2. Cut holes to allow steam to escape.
  3. Brush with egg white and sprinkle with sugar 

Bake the pie:

  1. Preheat the oven to 400 degrees.
  2. Bake on one of the lower racks of the oven for 30-35 minutes or until golden brown.
  3. Let the pie sit for 30 minutes - 1 hour before serving to help the filling set.

Serving Suggestions:

As we suggested earlier, try pairing this with our vanilla ice cream or if you prefer whipped cream, add a dollop of our vanilla bean whipped cream on top for extra creaminess.

Serve our pie up as an alternative to apple or pumpkin pie during holiday gatherings. Get creative with the recipe and add other fruit in with the gooseberries like pears or apples for a twist on the fruity flavors.
