Hapuku and Pineapple Guava Salad

This light and healthy salad is a great way to enjoy your pineapple guavas—also known as feijoa. The sweet tropical flavors of your pineapple guava are perfectly complemented by the flavors of pineapple, coriander and spicy peppers. 

Hapuku is a white fish with firm flesh whose mild flavor makes it a hardy and delicious protein choice for this salad. If you have trouble finding hapuku, you can substitute with sole, Atlantic wreckfish, or halibut.

INGREDIENTS

  • 4 Pineapple guava (Feijoa)
  • 1 drizzle light olive oil, plus 1 Tbsp
  • 1 pineapple, sliced thinly into 8 slices
  •  Zest and juice of 1 lemon
  • 2 red banana chilis
  • 2 x 200g (7 oz) hapuku filets 
  • 1 handful baby spinach
  • Chopped coriander to garnish
  • Thai basil leaves, to garnish
