Jamaican Chicken Kebabs In Mango Sauce Recipe

You won’t want to pass up this chicken marinade full of flavor from smoked paprika, allspice, nutmeg, ginger, habanero pepper and more. Dunk the chicken in the sweet and spicy mango sauce for a completely delicious experience.
Ingredients:
For the Jamaican Chicken Kebabs
- 1 ¼ lb boneless skinless chicken breast chopped into bite-sized pieces
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 2 minced garlic cloves
- 1 seeded and chopped habanero pepper
- 1 inch peeled and sliced fresh ginger
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon allspice
- ½ teaspoon nutmeg
- ½ teaspoon ground black pepper
- Cilantro for garnish
For the mango sauce
- 2 peeled and chopped mangos (2 cups)
- 1 seeded and chopped habanero pepper
- 1 minced garlic clove
- 2 tablespoons lime juice
- ¼ teaspoon salt
Equipment:

- Knife
- blender/food processor
- Measuring cups
- Measuring spoons
- Grill
- Skewers
- Mixing bowls
Recipe Steps:
Prepare the Jamaican chicken marinade:
- In a blender or food processor blend the olive oil, lime juice, Worcestershire sauce, brown sugar, garlic cloves, ginger, habanero pepper, ginger, thyme leaves, smoked paprika, salt, allspice, nutmeg and ground black pepper.
- Pour the marinade into a gallon-sized bag with the chopped chicken or mixing bowl for marinating.
- If using a bag, seal the bag, removing as much air as possible. Massage the marinade into the chicken and marinate in the refrigerator for 2-4 hours. If using a bowl, toss the chicken well to evenly coat.
- After marinating, string the chicken on the skewers.

Prepare the mango sauce:
- In a blender or food processor blend the mango, habanero pepper, garlic clove, lime juice and salt until smooth.

Cook the chicken:
- Preheat the grill to medium-high heat or 400 degrees Fahrenheit.
- Spray the grill grates with oil and cook the chicken kebabs for 5 minutes on each side.
- Serve the chicken with the mango sauce on the side for dunking or drizzled on top.
Serving Suggestions:
Enjoy the kebabs atop a bed of rice with a side of black beans garnished with cilantro. Dunk the chicken in the mango sauce or drizzle on top. Either way, you’ll get a bite of sweet mango and spicy chicken with every bite.
