Loquat Salsa

Loquats come into season in late spring and early summer. One of the best parts of summer is cooking outdoors with friends and family. This healthy and refreshing fruit salsa is sure to help you beat the heat and keep you happily munching.

Try combining this delicious, tangy and sweet loquat salsa with grilled meats, fish tacos, or just eat it with some chips. If you like a bit of kick in your salsa, try adding some chopped jalapeño. 

INGREDIENTS

  • 20 large or 30 small ripe loquats
  • 1/2 medium red onion, finely chopped
  • 4 stalks green onion, finely chopped
  • 2 Tbsp fresh lime juice (1 large lime)
  • 1/8 tsp salt, or to taste
  • 1/2 cup fresh cilantro, chopped
