Lychee Ceviche

What's a ceviche?  What's a lychee?  What happens when you put together two things you've probably never tried before?  You get magic.  Plain culinary magic. 

Sweet lychee and zesty, fresh ceviche seem like a no brainer now. But you might be scratching your head thinking, hmm, you sure about that? Oh, you bet! You won’t be having ceviche the same way again.

The sweetness of the pineapple and lychee paired with the zesty lime juice and spicy serrano pepper makes all the bright, bold flavors of ceviche pop! Use a firm white-fleshed fish like sea bass or tilapia for the recipe. Give it a try and let us know what you think!

Lychee Ceviche Recipe

Sweet lychees make the perfect addition to classic zesty ceviche. Top the ceviche on chips or tostadas for a flavorful dinner or lunch.

Ingredients:

  • 12 ounces raw sashimi-grade tilapia
  • ¾ cup freshly squeezed lime juice
  • ⅔ cup diced tomatoes
  • 1 diced serrano pepper
  • 15 ounce canned drained lychee in heavy syrup
  • 1 cup diced pineapple
  • ⅓ cup chopped green onion
  • ¼ cup chopped cilantro
  • 1 diced avocado
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Equipment:

  • Cutting board
  • Knife
  • Measuring cups
  • Measuring spoons
  • Two mixing bowls
  • Large serving bowl

Recipe Steps:

Prepare the fish:

  1. Cut the fish into small cubes and place in a mixing bowl.

“Cook” the ceviche:

  1. Add the tomatoes, jalapeno and lime juice to the fish. The acidity of the freshly squeezed lime juice will denature the proteins in the fish so that it’s “cooked.”
  2. Mix well, cover and refrigerate for 30 minutes. Stir the fish halfway through to help all the fish get coated. If the fish is cut into larger, thicker pieces refrigerate longer to give the lime juice more time to “cook” the fish.
  3. The fish should turn opaque and white. The longer it sits the more the fish will “cook” and become tough.

Finishing touches:

  1. Add the lychees, pineapple, green onion, cilantro, avocado olive oil and salt to the bowl.
  2. Mix well, transfer to a serving bowl and enjoy!

Serving Suggestions:

Serve ceviche up with tortilla chips, plantain chips, tostadas, lettuce leaves or atop toasted baguettes. 

Ceviche is best enjoyed the day it’s prepared so it’s at its optimal freshness. Serve ceviche alongside corn on the cob or rice.
