Noni Curry

Noni is an exotic little fruit that has long been used in traditional medicine. It is often used in elixirs and juices, but also goes wonderfully in curry. Its flavor and smell can be strong when preparing it or eating it alone, but it makes a perfect partner to the flavors of ginger and turmeric. 

This curry is delicious, healthy, and works best with a more yellow/green noni that has not fully ripened to white. 

INGREDIENTS

  • ½ tsp. curry paste/powder
  • ½ tsp chili powder
  • Sea salt, to taste
  • 1 2” knob fresh ginger, grated - or ½ tsp ginger powder
  • 1 noni fruit chopped into chunks
  • ½ tsp. turmeric
  • 1 small head broccoli
  • ½ medium onion, diced
  • 2 boneless, skinless chicken breasts (diced into 2” cubes) or 1 lb. wild prawns
  • 1 can coconut milk 
  • 1 cup wild rice, uncooked (soak overnight if possible)
  • 1 Tbs. coconut oil, for cooking
