Pink pomelo salad with crab, avocado & caviar lime

Why have a salad when you can have a taste explosion that's also healthy?  This salad is a beautiful thing - avocado, pomelo, crab and caviar limes.  So many incredible foods in one dish.  We don't hope you'll love it, we know you will.

Our crab salad has a fruity, tropical twist. With the citrus flavors of pomelo and caviar lime and the tropical flavor of the toasted coconut, we’re serving up a platter of beauty!

Pink Pomelo Salad Recipe

Butter lettuce topped with crab meat, pink pomelo, toasted coconut, avocado and a zesty dressing makes one heck of a flavorful salad that’s sure to satisfy. Don’t forget to top with our caviar limes for an added burst of flavor!


For the salad

  • 4 cups butter lettuce
  • ½ cup sliced pink pomelo
  • 8oz canned crab meat
  • ½ avocado sliced
  • ¼ cup sliced green onions
  • 2 caviar limes
  • ¼ cup toasted coconut flakes

For the dressing

  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon seasoned rice vinegar
  • 1 clove garlic minced

Recipe Steps:

Prepare the dressing:

  1. In a large bowl, whisk together the olive oil, lime juice, rice vinegar and garlic.
  2. Add the crab meat and green onions to the bowl and mix well. 

Toast the coconut:

  1. In a small saucepan over medium heat, toast the coconut for about 5 minutes or until the coconut turns golden brown.

Prepare the salad:

  1. Wash and chop the head of lettuce and put two cups or two handfuls of lettuce on each plate.
  2. Top with sliced pomelo and the dressed crab meat.
  3. Slice the avocado and place a ¼ on each salad.
  4. Top with toasted coconut and caviar lime pearls.

Serving Suggestions:

Enjoy this salad as a main meal for lunch or dinner. Serve it alongside roasted potatoes or a warm cup of soup.

Wanna get fancy with serving? Instead of chopping the butter lettuce, try serving scoops of the salad in leaves of lettuce for a fun look. Pair with crackers on the side to use as a way to scoop and eat the salad out of the leaves or just use a good ‘ol knife and fork.
