Fresh heart of palm is a completely different experience than the heart of palm you find in a can or jar in the grocery store. It has a fresh crisp texture that is highlighted when you eat it raw along with a subtle, complimentary nutty flavor.

INGREDIENTS

  • 1 cup quinoa
  • 1/2 cup finely chopped red onion
  • 1/2 pound fresh hearts of palm 
  • 1/4 cup red-wine vinegar
  • 1/3 cup olive oil
  • 1/2 cup packed flat-leaf parsley leaves
