Roasted Garlic Jackfruit Seed Hummus

Once you've finished cutting your jackfruit, you're going to have quite a few seeds left-over—seeds that are completely edible and delicious. This delicious jackfruit seed hummus recipe is a great and delicious way to put those seeds to use. It's also completely bean, nut & oil-free as well as vegan. 

If you're still trying to figure out how best to cut your jackfruit, this recipe also includes a simple walk-through. 

INGREDIENTS

  • 1 ¾ – 2 cups jackfruit seeds + water to boil
  • 4 cloves garlic
  • 6–8 tbsp low-sodium vegetable broth (start with 6 and add more as needed)
  • 2 tablespoons non-dairy milk
  • Juice of half a lemon
  • 2 tablespoons organic raw tahini
  • Dehydrated celery powder (or salt) + fresh black pepper, to taste
  • Paprika, to garnish
  • Flavoring ideas: cumin, nutritional yeast, chili powder, have fun with it!
