Need a flavorful side salad for your next meal? Look no further. This spinach salad with sweet sapodilla, pine nuts, red onions, raisins and gouda cheese will hit the spot. It’s all dressed in a flavorful apple cider mustard dressing and pairs well with most main meals.

Ingredients:

For the salad:

  • 5 ounces spinach
  • 2 sapodillas peeled and sliced with seeds removed (1 ½ cups)
  • ¾ cup chopped or crumbled gouda cheese
  • ½ cup sliced red onion
  • ⅓ cup raisins
  • ¼ cup pine nuts

For the dressing;

  • 3 tablespoons olive oil
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • ½ teaspoon sugar
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon ground cumin
  • ¼ teaspoon of salt
  • ⅛ teaspoon ground black pepper

Recipe Steps:

Prepare the salad:

  1. In a large serving bowl add the spinach leaves, sliced sapodilla, gouda cheese, red onion, raisins and pine nuts.

Prepare the dressing:

  1. Whisk together the olive oil, apple cider vinegar, dijon mustard, sugar, garlic powder, ground cumin, salt and pepper.
  2. Pour the dressing over the prepared salad and toss well to evenly coat all the ingredients.

Serving Suggestions:

Serve this salad as a side dish to your main meal. It compliments most comfort food meals and fall infused dishes.
