Yuzu is a Japanese specialty citrus, similar to lemon, but more delicate in flavor. Due to being illegal to import from their native Japan, this fruit is rare and difficult to find.

About The Harvest

A Japanese gastronomist once said, “the yuzu fragrance is entirely its own. It resembles no citrus familiar to the West.” Be sure not to judge these rustic fruits by their rough skin and (tons of) seeds, the delicate, acidic and floral flavor hidden in the rind and sparse pulp is a rare culinary must-have. Their penetrating aromatic notes make them a delicious addition to sauces (Yuzu is the main ingredient in Ponzu sauce), chili pastes and butters used for cooking savory foods. They can also be used for baked goods and as sour mixer in cocktails. Try them in anything needing that extra pop of zest.

Yuzu has a subtle, yet more acidic flavor often used in savory dishes. Utilizing your Yuzu is highly dependent on the recipe you make. Choose your own adventure, but remember the whole fruit is a treasure trove from rind to seeds. 

The fruit and seeds are commonly used in fermentations and infusions to impart their complex flavor. Yuzu seeds are not edible, but they’re often used in applications like ponzu sauce, vinegars or other infusions to impart their unique citrusy flavor. Yuzu can also be baked into cakes, breads, and pastries, and makes delicious jams, jellies and candies.

Tucked away in Santa Paula, CA is Mud Creek Ranch, owned by Steven and Robin Smith. The  Smiths’ both came from farming families that can be traced back for generations. In 1985, they bought their own farm knowing they were signing up for a “fixer-upper.” Over the years, they realized they signed up for so much more with their beloved Mud Creek Ranch! They’ve been selling oranges, avocados and lemons at the local farmers’ markets in Ventura and Santa Barbara for nearly 30 years, and are known for having one of the largest selections of tangerines throughout all of Southern California. At Mud Creek they care equally for their soil’s health, having practiced organic farming since the 90’s. They started growing healthy foods for their children at home and now 30 years later, their kids sell produce right alongside them at the market.
