This exceptional box of New England root vegetables is best enjoyed just as the farmers that grew them do: simply. Badger Flame beets are sweet, golden, cylindrical roots perfect for roasting or for slicing thin with a mandolin to add a pop of gold to your salad. Enjoy the frost-sweetened Bolero carrots as a crisp, sweet snack, or roast them to caramelize even more of their natural sugars. The watermelon radishes are the easiest: slice them thin with a mandolin to add some spice (and gorgeous pink) to your salads.

Store the roots in your refrigerator in the vented plastic bags they’re shipped in. These roots will stay fresh for up to 3 weeks in the fridge (but you’ll eat them all long before that).

Tasting Notes

Bolero Carrots: Grown across small New England farms in the fall and left in the ground just long enough for the first frosts to convert their starches to sugars for their anti-freezing effect, these carrots will be the sweetest you’ve ever tasted!

Badger Flame Beets: All the sweet flavor without the earthiness that sometimes turns people’s taste buds against your standard beet, these cylindrical, golden beets roast up and caramelize perfectly!

Watermelon Radishes: Crisp and slightly peppery, these radishes don’t taste like watermelon, but with green skin and bright-pink burst in the center these radishes will spice up any salad, slaw, or kimchi.

About The Harvest

If you’ve only eaten carrots from the grocery store, you’re missing out. New England farmers like Stacey and Alex wait to harvest their fall carrots until after the first frost when the carrots convert some of their starches to sugar to avoid freezing. When the ground around them thaws, and the farmers pull these Bolero carrots, no one can resist rinsing them off for a quick, sweet snack right in the field.

As a chef, Stacey grows Row 7 Badger Flame beets for herself and her fellow chefs. Perfectly sized for roasting, these beets appeal to even the most skeptical eaters. Row 7 develops seeds for taste and nutrition; seeds that are meant to be ingredients.

On top of the vibrant-orange carrots and glowing-gold beets, thinly-sliced watermelon radishes will add a new dimension to your salad both with the pink starburst in the center and the crisp, spicy taste.
