Chef Gida is making this experience with Hawaiian Yellow Ginger from Kolo Kai Organic Farm, one of the only certified organic ginger and turmeric farms in Hawaii, pictured above with Chef Gida. The name ‘First Harvest’ refers to this ginger being from the season’s first mature ginger harvest. As ginger stays in the ground and continues to mature it will decline in sugar and liquid content and will increase in starchiness. This ginger is fresher than what you can find at the store, and has a more fibrous texture and spicy taste than white ginger.
Gida is pairing this locally-sourced harvest with Kaua’i Macadamia Nuts in her Kaua’i Ginger Mac Nut Chili Crunch, a Hawaiian twist on the traditional Chinese condiment. Also included in this experience is Kaua’i Vanilla Ginger Bites made with locally-grown, specialty vanilla from The Vanillery of Kaua’i. And to top it all off, she is small-batch crafting a Kaua’i Ginger Lemon Culinary Syrup to be used in cocktails and mocktails. She is also including exclusive online recipes for the FruitStand community. We recommend enjoying your First Harvest Ginger fresh, as its fresh state is what really sets this ginger apart from what you are used to from your grocery store’s ginger. Your ginger will arrive ripe and ready to consume. First harvest ginger will be best kept loose in the crisper drawer of your refrigerator to preserve the “fresh” quality. When you’re ready to eat your ginger, remove peel or leave intact based on your personal preference. To peel, use a spoon’s edge or paring knife to scrape the skin off. Fresh ginger can be utilized in numerous ways: add to stir fries, curries, salads, marinades, or to your favorite homemade sauce. You can also infuse hot water or a neutral spirit to impart its delicate flavor. The Kaua’i Ginger Lemon Syrup is a spicy addition to a craft cocktail or a refreshing mocktail. Chef Gida’s Chili Crunch is spicy and crunchy; a good topping for eggs, rice bowls, pizza, or really on anything!
