Fresh Ginger - Leave the peel intact to store in the crisper drawer of your refrigerator. After a week you can either freeze or leave out on your countertop to dry. While your ginger is likely to dry just fine on your counter, drying ginger at home leaves it susceptible to any mold spores and humidity that are present. There is therefore some risk for mold or rot. If you'd like to avoid this risk, we also recommend freezing your ginger. To freeze ginger, slice or mince to lay on a parchment-lined tray. Freeze until solid and place in a plastic freezer bag or airtight container to be stored for about six months.

Chef Gida is making this experience with Hawaiian Yellow Ginger from Kolo Kai Organic Farm, one of the only certified organic ginger and turmeric farms in Hawaii, pictured above with Chef Gida. The name ‘First Harvest’ refers to this ginger being from the season’s first mature ginger harvest. As ginger stays in the ground and continues to mature it will decline in sugar and liquid content and will increase in starchiness. Everything is wonderful with the exception of the slightly shriveled fresh ginger root. But it was only due to the Federal Express delays due to the horrible weather. Hopefully next year the weather will be more more cooperative regarding delivery.

The fresh ginger is spicy and juicy adding great flavor to savory dishes. I chopped plenty along with a few cloves of garlic and sautéed in some oil. Then added a mixture of soy, lemon juice, crushed red pepper and honey. I added chicken or fish fillets to the liquid and cooked briefly until done and served on a bed of bean thread noodles and garnished with the crunchy, spicy macadamia nut sauce included in the shipment and some caviar limes for a delicious restaurant quality meal. I enjoyed the candied ginger and look forward to making cocktails with the ginger juice.

When I opened the box, it was packaged beautifully. Each item was secure and sealed. The ginger was so fresh! I’m now officially obsessed with the Vanilla Ginger Bites and need more ASAP! The Chili Crunch is not too spicy yet has a bit of a kick and loads of flavor. I’ve had it on salads, wraps as well as by the spoonful. I haven’t tried a drink yet with the syrup but my vodka is ready to go. I plan to make candied ginger with the fresh as well as storing a bit diced in the freezer for later use.
