Your Garlic Scapes are ready to eat upon arrival. They are great for pickling, grilling, adding to savory dishes like salads and stir fries, or for crafting delicious dressings, pesto and sauces. Simply trim and discard the ends of the stalks. Cut into small pieces or leave in stalks. You can saute, roast or grill garlic scapes like you would prepare asparagus or green beans, consuming the entire stem and flower head.

To store garlic scapes, bundle them together with a rubber band and store in an airtight bag in the refrigerator for up to 3 weeks.

Garlic scapes can also be chopped, placed in a freezer-safe bag and stored frozen for up to one year.

Garlic scapes can also be pickled and fermented to keep for long periods of time.

If you plan on eating them within 1-2 days, make a bouquet of garlic scapes in a vase of fresh water. Leave on your counter at room temperature and change water daily.

The Garlic Gods

Jana and Geoffrey Yockey grow gourmet garlic on their family’s original Idaho homestead, established in 1908.

This husband-and-wife team grows limited runs of specialty and gourmet garlic, inspired by Geoffrey’s 20 years in the restaurant business and fine dining. A lot has changed in farming since their great grandparents homesteaded the land in 1908, but the Garlic Gods farm is committed to remaining small using basic farming equipment and no harsh chemicals. They cultivate the old fashioned way—with their hands in the dirt.

Garlic Scapes from The Garlic Gods

Garlic Scapes are the stalks that grow from the bulbs of hardneck garlic plants. They are a fleeting harvest, only available for a few weeks in late spring and early summer.

Tasting Notes

As a precursor to the robust garlic bulb, garlic scapes are more mild and sweet—much like chives and scallions. Yet with an unmistakable garlicky flavor, scapes are a perfect addition to any meal, whether raw or cooked.

About The Harvest

The bulbous garlic root isn’t the only edible part of the plant. Garlic Scapes are vibrant green, elegant, curly shoots with a tightly-closed bud that forms early in the garlic season. Jana and Geoffrey will soon trim the garlic scapes sprouting out of the ground to allow for the plant’s resources to be sent toward the bulb. For foodies, these thin, spiraled stalks are a much-awaited harvest late spring to early summer. Garlic Scapes are sold in tangled bunches usually at the local farmers’ market. Only available a few weeks a year, Garlic Scapes are a fleeting harvest.

The mild and sweet flavor of garlic scapes—much like chives and scallions—make them a lovely addition to spring pesto and a delicious grilled or sauteed vegetable. Prepare garlic scapes raw or cooked, whole or chopped, similar to asparagus or green beans. They are a delightful vegetable to cook with if you haven’t yet experienced them in your favorite dishes.

Garlic Scapes for that WOW factor!!

This was my first time ever trying garlic scapes, and all I can say is WOW!! They came in super fresh and have lasted weeks in our fridge which is wonderful since they were so generous with the amount they shipped us. These work great as replacements for garlic or onions in recipes, or are a stand out treat all on their own. Grilled or quickly pan fried are both amazing ways to enjoy these treasures!

Another great product from Fruitstand

Grilled some in a pan. Very similar to asparagus in terms of cooking. Mild garlic/onion type flavor. Very different from garlic.

Garlic Scapes

Amazing to say the least! Some I grilled, made 4 butter logs then cut "round dollops" to top a steak or anything you want to enjoy them on! The rest went to freezing bags to use throughout the rest of the year, can't wait for cooler days to make a garlic soup! I diced a whole bunch , put them in a glass jar and froze them to use as toppers for baked potato, mashed potatoes, garnish etc... they not only taste amazing but smell amazing!
