Three Beans In A Box - The Heirloom Bean Experience
Scarlet Runner
Rinse the dry beans first, then soak them in water for several hours. Replace the water every two hours. Soaking will reduce cooking time. After soaking, place in a fresh pot of water and bring to boil. Simmer for 45 to 60 minutes or until soft. Season them to taste and serve as a side with your favorite meal.
Flageolet
Place the beans in a large bowl and cover with 3 inches of water. Cover the pot and soak overnight at room temperature. You can skip this step if using an Instant Pot or pressure cooker. The next day, drain the beans and combine with your favorite stock, such as chicken or vegetable. Add salt, garlic and other spices and simmer for 1-2 hours, until tender. Drizzle with olive oil and add to stews, bean salads, and cassoulets.
Peruano
Rinse the beans thoroughly and then cover with water and soak overnight. The next day, drain the beans and cover with 4 inches of water in a large pot. Bring to a boil and simmer for about 20 minutes or until tender. Season to taste and add to your favorite Mexican dish.
The Flageolet and Peruano beans are very different, but can be hard to tell apart visually. The key is to look at the dried beans next to each other, and you’ll see that the Flageolet are distinctly light green, while the Peruano have more of a yellow hue.
All beans can be stored for up to a year in an airtight container in a dry environment, such as a pantry or shelf. We recommend eating them sooner than a year.
There are a wealth of incredible recipes online. Our favorites are from Epicurious and Thread & Whisk. We recommend searching online for inspiration.
