Mahachanok Mangoes

Keep your Mahachanok Mangoes on the counter to ripen at room temperature before placing in the refrigerator as needed. 

Mahachanok Mangoes will change from green to yellow as they ripen with a pink blush on the side exposed to the sun. Their buttery flesh will soften and you can tell if they are ripe if you apply a gentle squeeze without bruising. They should give a little bit, but not be soft.


Mahachanok Mangoes are great for eating fresh out of hand. Peel the mango then remove the seed/pit. Dice or slice the fruit to be served fresh or add it to fruit salads. They are a delicious addition to smoothies, desserts and baked goods as well. 

WARNING: DO NOT CONSUME the seed/pit or the skin of the mango as they are inedible. 

Follow these simple steps to learn how to remove the skin and cut the fruit away from the seed:

  • Using a peeler, peel the skin from the mango and toss it into your compost or green waste. Make sure to keep your peeling shallow so you don't lose too much of the fruit.
  • Now stand the mango vertically on the cutting board and, with a sharp knife, cut the sides off from top to bottom, avoiding the seed in the center. If you hit the center, just adjust your cut a little farther out. This should leave you with 2 fairly big pieces.
  • Now trim off the rest of the fruit around the seed and discard both it and the skin.

This variety of mango will store well for up to three days in the refrigerator AFTER ripening. We recommend always ripening at room temperature before storing in the refrigerator. Never store fresh mangoes in a plastic bag as they need to breathe. Place loose in the crisper drawer. 

These mangoes will freeze nicely if sliced and bagged or pureed and stored in ice cube trays or another container.
