Yuzu
You can tell when Yuzu is ripe by its penetrating fragrance—sweet and zesty! Its thick, bumpy skin will also turn a vibrant golden yellow with some hints of green. Their skin will be taut and the fruit will feel slightly heavier than their unripe state. Your Yuzu will arrive ripe for eating. No need to wait to get busy in the kitchen with them.
Yuzu has a subtle, yet more acidic flavor often used in savory dishes. Utilizing your Yuzu is highly dependent on the recipe you make. Choose your own adventure, but remember the whole fruit is a treasure trove from rind to seeds.
The fruit and seeds are commonly used in fermentations and infusions to impart their complex flavor. Yuzu seeds are not edible, but they’re often used in applications like ponzu sauce, vinegars or other infusions to impart their unique citrusy flavor. Yuzu can be kept at room temperature for up to 1 week. Please note that this method will speed up the ripening. For storage up to 2 weeks, store Yuzu in the fruit crisper drawer of your refrigerator.
It is not recommended to freeze whole Yuzu. For what doesn’t get used in your first recipe you can store the rest:
- Put the peels in a resealable bag and freeze.
- Freeze the juice or zest in ice cube trays.

Tucked away in Santa Paula, CA is Mud Creek Ranch, owned by Steven and Robin Smith. The Smiths’ both came from farming families that can be traced back for generations. In 1985, they bought their own farm knowing they were signing up for a “fixer-upper.” Over the years, they realized they signed up for so much more with their beloved Mud Creek Ranch! They’ve been selling oranges, avocados and lemons at the local farmers’ markets in Ventura and Santa Barbara for nearly 30 years, and are known for having one of the largest selections of tangerines throughout all of Southern California. At Mud Creek they care equally for their soil’s health, having practiced organic farming since the 90’s. They started growing healthy foods for their children at home and now 30 years later, their kids sell produce right alongside them at the market.

First try at Yuzu
Love your products. Great packaging. Was fun to taste and experience this for our first time. I slivered the peel and added to a batch of mixed citrus marmalade what was left.

Used the zest
Made ricotta ravioli yesterday and added yuzu zest. What a wonderful addition. First ate yuzu in Japan. Have plans for yuzu sherbet.

So good!
It was fantastic trying a new fruit in the midst of a cold winter in Alaska! I used one for a cocktail that was delicious, and my brother also candied some of the peel, which we would highly recommend. Thank you so much for giving people the opportunity to try new things and support farmers from all over.

Disappointed. Other varieties of Yuzu much more flavorful, only four fruits
The company did a great job with communications, marketing and shipping, although it took a week before my order shipped. But on arrival, the fruit was almost identical in taste to a lemon, which it should not be. There are multiple varieties of yuzu and this one is not the one to get - look for "sumo". There were only four fruits in the box and it was a rather inordinately high cost per fruit, in my opinion. I will not buy again.
